Vegan Double Macaroni and Cheese

8 oz (2 cups dry) elbow macaroni of choice
1 cup tofu cottage cheese (see below)
3/4 cup sunflower sour cream
1 medium onion, diced and sauteed
1 cup Best Pimento cheese sauce

Tofu Cottage Cheese
1/2 lb firm water-pak tofu
3/4 teaspoon salt
1 teaspoon onion powder
1/4 teaspoon garlic powder
1/3 cup Veganaise or homemade mayo
1 teaspoon chopped chives, fry or fresh
1 teaspoon chopped parsley, dry or fresh

1. Combine all ingredients. Bake in 350 degree oven for 30-45 minutes. (Don’t let it get too dry.)
2. Mash tofu in bowl, add rest of ingredients and mix well.
