Vicki’s Tasty Meatballs

1 cup nut meal, pecan, almond, walnut, etc.
1½ cup soft whole-grain bread crumbs (can be made in a food processor or blender)
1 16-oz. pkg water-pack tofu, firm or extra firm
3 tablespoons gluten flour
2 tablespoons onion powder
3 tablespoons parsley
2 teaspoons salt
1 teaspoon sage
1 teaspoon marjoram
¼ cup nutritional yeast flakes

1. Mix all ingredients together and mash or knead thoroughly with hands.
2. Use a cookie scoop or hands to make into balls and place on a sprayed cookie sheet.
3. Bake at 325 for 30 minutes.
4. Makes approximately 25 meatballs.
