Oat Meatballs

Servings: 4

INGREDIENTS
2 cups oatmeal
2 cups fresh whole-grain bread crumbs
1 cup pecan or walnut meal
1 onion, minced
2 tablespoons ground flax seed
2 tablespoons gluten flour
2 tablespoons nutritional yeast flakes
1 tablespoon Mckay’s chicken style seasoning
1 teaspoon sage
1 teaspoon basil
½ teaspoon garlic powder
2 Tablespoons olive oil
1/4 cup Bragg’s Liquid Aminos (or soy sauce)
1 3/4 cups boiling water

INSTRUCTIONS
1. Heat oven to 350.
2. Mix dry ingredients.
3. Mix wet ingredients and add to dry. Let stand 20 to 30 minutes.
4. Using a small scoop, form into balls and place on sprayed cookie sheet.
5. Bake 30-40 minutes, depending on the size of scoop you used.
6. Don’t over bake.

If you have had your meatballs disappear in the spaghetti sauce, this is the recipe for you! These meatballs hold up well in sauce, gravy and even the crock pot. You can make bread crumbs in a food processor or blender. Be sure to use the best 100% whole-grain bread for the most nutritious food!
