Non-Dairy Vanilla Pudding

Servings: 4

1/4 cup raw cashews
1/3 cup cane juice crystals
1/4 teaspoon salt
4 Tablespoons cornstarch
1 teaspoon vanilla
2 1/2 + 1/8 cup soymilk

1. Blend all ingredients until creamy.
2. Pour into sauce pan and bring to a boil stirring constantly until mixture thickens.
3. Cool. When cooling, place plastic wrap on top to avoid the “scum” formation.
4. To make chocolate pudding, omit the vanilla and use chocolate soymilk + 1-2 Tablespoons cocoa powder.
