Vanilla Ice Cream

Servings: 1 quart

1 14 oz can full-fat coconut milk
1 1/4 cups soymilk or other non-dairy milk
1/2 cup granulated sugar or agave syrup
1 Tablespoon vanilla extract

1. Place all of the ingredients in a medium bowl and whisk until well combined.
2. Cover and chill in the refrigerator for at least 2 hours.
3. Then freeze in an ice cream maker according to the manufacturer’s directions.
