INGREDIENTS
4 cups unsweetened, shredded coconut
3/4 cup whole wheat pastry flour
1/3 cup regular rolled oats
3 cups chopped dates
1/3 teaspoon salt
1/4 cup honey
3/4 cup cold water

INSTRUCTIONS
1. Mix all ingredients together. Scoop onto an ungreased cookie sheet with an ice ream scoop. Bake until browned – about 20 minutes at 350* F.
Makes about 18 cookies.
