Sweet Potato and Groundnut Stew

Servings: 4

1 1/2 pounds sweet potatoes, chopped
1 large onion, chopped
1 14 ounce can crushed tomatoes
1/2 cup natural peanut butter
4 cups water
4 cloves garlic, minced
2 Tablespoons grated ginger
2 teaspoons cumin
1/4 teaspoon cayenne, or to taste
salt to taste

1. Cook at a simmering temperature for 20 minutes, until everything is cooked through and flavors are combined.
2. Serve over cooked brown rice. Top each serving with fresh cilantro and chopped peanuts.

Don’t forget the cilantro. It really ‘makes’ this recipe!
