Mashed Potatoes

Mashed potatoes
5 cups potatoes, cubed
1/2 cup plain soy milk, adding more, a tablespoonful at a time, if necessary
1 1/2 teaspoons onion powder
2 Tablespoons lecithin granules
1/4 teaspoon garlic powder
1 to 1 1/2 teaspoons salt
2 Tablespoons nutritional yeast flakes

1. Place cubed potatoes in large kettle with water and bring to a boil.
2. Reduce heat and simmer until potatoes are soft.
3. Remove from heat and drain.
4. Add remaining ingredients and mash with a potato masher or whip with an electric mixer.
