Marie’s Vegan Dressing (or Stuffing)

Servings: 4

1/2 cup non-hydrogenated soy or nondairy margarine
2 cups onion, chopped
2 cups celery, chopped
1 cup carrots, sliced
2 4 oz cans mushrooms (reserve liquid) or fresh mushrooms, chopped or sliced
1/4 cup fresh parsley, chopped
1 Tablespoon salt or to taste
1 1/2 teaspoon sage
1 teaspoon thyme
1/2 teaspoon marjoram
12-13 cups whole grain bread, cubed and dried
2 – 2 1/2 cups chicken broth (1 Tablespoon McKay’s Chicken Seasoning per cup of water)

1. Saute onion, celery, carrots, mushrooms, and parsley in margarine.
2. Stir in seasonings.
3. Pour sauteed veggies over bread cubes, mixing well.
4. Pour enough chicken broth over the bread cube mixture to moisten. Mix well again.
5. Pack lightly into a crockpot and cook on high for 45 minutes.
6. Reduce to low heat and cook for 4-8 hours (may bake in oven, if desired).
