Blueberry Muffins

Servings: 4

1/4 cup hot water
1 Tablespoon grand flax or chia seeds
1 cup white whole wheat flour
1/2 cup oat flour
1/2 cup cane juice crystals
1/2 teaspoon salt
2 teaspoons aluminum free baking powder
1/3 cup canola
1/2 cup non-dairy milk
1 cup fresh or frozen blueberries

1/2 cup brown sugar
1/2 cup oat flour
1/4 cup coconut oil

1. Preheat over to 400 degrees. Line muffin tin with liners.
2. Combine hot water with ground flax or chia seeds in a small bowl.
3. Combine topping ingredients and set aside.
4. Combine flour, sugar, salt and baking powder in a large bowl.
5. Mix together oil, milk and flax mixture in a small bowl.
6. Add oil mixture to flour mixture and stir, being careful not to over mix.
7. Fill muffin cups about 3/4 full and sprinkle with crumb topping mixture.
8. Bake 20-25 minutes in the preheated over or until done.
