Lentil Stacks

Servings: 4

INGREDIENTS
2 cups dry lentils
5 cups water
2 Tablespoons McKay’s Chicken Seasoning
1/2 cup onion, chopped
1 1/2 teaspoons salt
2 cloves minced garlic
1 teaspoon sweet basil
1-2 bay leaves
2 teaspoons oregano
2 teaspoons sage
2 teaspoons onion powder
1 15-oz can Tomato Sauce (recipe below)

Lentil Stack Toppings
2 Tomatoes, chopped
1 cup chopped olives
Green leaf lettuce, chopped
1 avocado, diced
1/2 cup onion, chopped
Ranch dressing, salsa or both
Whole Grain Toast

INSTRUCTIONS
1. Look over the lentils for any debris and wash them.
2. Put lentils, water, onion and seasonings in a pot on the stove and cook until lentils are soft ,approximately 45 minutes.
3. When lentils are the consistency you want, add the tomato sauce and salt to taste.
4. Place the toast on your plate and top with cooked lentils. Then add the chopped leaf lettuce, tomatoes, onions, and avocado. Top with your favorite topping.

RECIPE NOTES
I like to serve the lentils on Brown rice that has been seasoned with some Vegetarian Express Saucy Ranch dry seasoning mix instead of the toast. Then I top it with Chunky Sunrise Salsa.
