Tofu Loaf: Take Two

INGREDIENTS
1 large onion, diced
2 Tablespoons olive oil
2 12-14 oz. packages extra firm, water-packed tofu
1 1/2 cups walnuts, finely chopped
1/4 cup nutritional yeast flakes
2 Tablespoons beef-like seasoning
1 Tablespoon Bragg’s Liquid Aminos
3/4 cup unsweetened non-dairy milk
4 cups corn flakes
4 cups crispy brown rice cereal
INSTRUCTIONS
1. Preheat oven to 350 degrees.
2. Saute onion in oil until tender and translucent.
3. Drain and mash tofu.
4. Add sauteed onion, then remaining ingredients, add the cereal last.
5. Mix thoroughly. (Mixture will seem dry.)
6. Coat 9 X 13 baking dish with non-stick spray and spoon and press mixture into dish.
7. Bake for 45 minutes, covered; and 15 minutes uncovered until the top is browned and the edges are a bit crispy.
RECIPE NOTES
If you are trying to cut out as much free fat as possible, try ‘sweating your onions over low heat until translucent and tender. McKay’s makes a nice beef seasoning, but you might like to try others such as Country Life, Bill’s Best or The Vegetarian Express. You can use any low sodium soy sauce for the Bragg’s.
