Summer Salad with Grapefruit Vinaigrette
1 head lettuce, roughly chopped
3-4 Dino kale leaves, roughly chopped
1 apple, diced
1 pear, diced (small box only)
1 banana, sliced
1 cup chopped nuts
1/2 cup dried fruit of choice
1/4 cup freshly squeezed grapefruit juice (about haly of a large grapefruit)
1/4 – 1/3 cup light olive oil
1 teaspoon honey or agave nectar
good pinch of salt and freshly ground pepper
1. Toss salad together and top with the vinaigrette.
2. Combine all ingredients in a jar or container with a tight sealed lid. Shake vigorously until combined well. Taste for sweetness, salt and pepper and adjust.
3. Spoon over salad.
4. Store in refrigerator for up to 3 days.
