Mexican Cheese Sauce/Best Pimento Cheese Sauce
Best Pimento cheese sauce
1 cup water
3/4 cup raw cashews or blanched almonds
3 Tablespoons nutritional yeast flakes
1 1/4 teaspoons salt (or less, to taste)
2 teaspoons onion powder
1/4 teaspoon garlic powder
1/2 cup pimientos, undrained
2 Tablespoons lemon juice
1 teaspoon dill weed
1 teaspoon cumin
1 teaspoon chili powder
1. Combine all in blender and blend until smooth. Don’t be afraid to let the blender run for a few minutes.
2. Pour into pan and heat, while stirring, to thicken.
This recipe, without the cumin and chili powder is also known as Best Pimento Cheese Sauce. It is used for a sauce over vegetables or even to make macaroni and cheese.
