Carob Oatmeal

1/2 cup water
1/4 cup chopped dates
1 cup oatmeal
1 cup water (separate from the first 1/2 cup)
1 cup non-dairy milk of choice
2 Tablespoons carob powder
1 teaspoon agave nectar, honey or stevia to taste, optional
1 teaspoon vanilla
3/8 teaspoon salt, optional

1. Heat the 1/2 cup water and the dates while getting the rest of the ingredients together.
2. Add all ingredients and bring to a boil. Lower heat to low and cook for 10 minutes or more,
3. Serve with a sprinkle (1 Tablespoon or less) of mini chocolate chips and whipped coconut milk topping (optional).
