Garbanzo Bean Spread
2 cans garbanzo beans, rinsed and drained
2 stalks celery, chopped fine
½ onion, chopped fine
¼ cup dill pickle relish
¼ cup sliced green olives with pimentos, chopped
½ cup Vegenaise or homemade mayo (maybe a little less depending on how wet or dry you want the mixture)
1 Tbsp. chick-style seasoning
1. Blend beans in blender or food processor.
2. Mix all other ingredients in bowl and add the beans.
3. Serve as a sandwich spread. You can make this a couple of days ahead. This spread is also very good served on multi-grain crackers.
