Tofu Loaf
INGREDIENTS
1 medium to large onion, diced
Water to saute onion (start with ¼ cup)
2 12.3 ounce boxes Mori-Nu tofu, extra firm
1½ cups walnuts, finely chopped
¼ cup nutritional yeast flakes
3-4 tablespoons beef-like seasoning
2-3 teaspoons Bragg’s liquid aminos
¾ cup non-dairy milk (I use Silk soymilk)
12 ounce crispy rice cereal
INSTRUCTIONS
1. Preheat oven to 350 degrees.
2. Saute onion in water until tender and translucent, adding small amounts of water as it cooks if needed.
3. Place tofu in large mixing bowl and mash slightly.
4. Add sauteed onion, then remaining ingredients, adding the cereal last.
5. Mix thoroughly. (Mixture will seem dry.)
6. Coat 9×13 baking dish with non-stick spray and spoon mixture into dish, pressing lightly.
7. Bake for about 50-60 minutes, until top is browned and the edges a big crispy.
