Marinated Tofu Salad

Servings: 4

1 16 oz package water-pack firm tofu, cut into 1/2 inch cubes
2 tablespoons olive or grape seed oil
1 tablespoon lemon juice
1 Tablespoon Bragg’s Liquid Aminos
2 teaspoons Italian seasoning
1/2 teaspoon salt
2 cloves garlic, minced

Green Salad
1 package mixed salad greens
1 cucumber, diced
2 medium tomatoes, diced

1. Prepare the marinated tofu by mixing the oil, lemon juice, Bragg’s, seasoning, salt and minced garlic.
2. Stir in diced tofu.
3. Marinate the tofu in the dressing for at least 1 hour or overnight in the refrigerator.
4. Spoon over green salad.
