Creamy Chipotle Pepper Dressing

Servings: 2 cups

1 red, yellow, green or orange pepper, cut in half
2-3 Tablespoons sweet or green onion, chopped fine
1-2 Tablespoons fresh cilantro, chopped very fine
1/2 teaspoon cumin
1/4 teaspoon garlic powder
1/2 teaspoon hickory seasoning
1 Tablespoon tomato paste (you can use 2 Tablespoons barbecue sauce instead of the hickory seasoning and tomato paste)
2 cups non dairy sour cream

1. Arrange pepper halves on a cookie sheet, skin side up, and place under broiler. Broil until skin is black. Peel skin off and dice peppers into small pieces (or save time and chop raw).
2. Mix peppers and all other ingredients together with sour cream. Chill and use when needed.
