Quinoa Salad

INGREDIENTS
1 1/2 cups quinoa
2 1/2 cups water
1/2 cup green onions
2 oz sliced black olives
1 1/2 cups tomato, diced small
1 1/2 cups English cucumber, diced small
1 1/2 cups bell peppers, green, yellow, orange; diced small

Dressing
3 Tablespoons oil
2 Tablespoons lemon juice
1/2 teaspoon garlic powder
1 – 1 1/2 teaspoons sea salt, optional

INSTRUCTIONS
1. Rinse quinoa in a fine mesh colander.
2. In a medium sized pot, bring water to a boil. Add quinoa.
3. Cover and simmer approximately 15 minutes until water is absorbed.
4. Remove from heat and cool.
5. Add vegetable ingredients to cooled quinoa. Chill.
6. Mix together dressing ingredients thoroughly. Add to salad and toss.
7. Allow to marinate 30 minutes in refrigerator before serving.
8. Good in a whole-grain pita pocket with hummus.
