Mock Fried Chicken

1/4 Cup 1% or nonfat milk
1/4 Cup Yellow cornmeal
1/4 Cup Dry bread crumbs
2 Tbs. Chopped fresh parsley

1/8 tsp. Nutmeg
1/2 tsp. Pepper
1 lb. Chicken breasts, boneless, skin removed

Preheat oven to 400 deg. F. Spray baking sheet with vegetable cooking spray. Pour milk into shallow bowl. Mix dry ingredients in plastic bag. Dip chicken one piece at a time in milk, then coat with cornmeal mixture. Place on prepared baking sheet. Bake, turning pieces once, until cooked through, 30-35 minutes.
