Lite Potato Salad
Servings: 4
INGREDIENTS
1 lb. peeled, cooked potatoes, cubed and chilled
2 hard-boiled eggs, sliced
1 cup finely chopped celery
1/2 cup finely chopped red onion
1/2 cup plain lowfat yogurt
1/4 cup reduced-calorie mayonnaise
1 Tbs. chopped parsley
2 Tbs. yellow mustard
Dash each salt and pepper
INSTRUCTIONS
Combine potatoes, celery and onion; set aside. In small bowl, combine yogurt and remaining ingredients. Add to potato mixture; stir to coat. Cover and chill at least 30 minutes
