Creamy Rice Pudding
3 C Milk, nonfat
1/3 C White rice, uncooked, short-grain
1/3 C Sugar
1 tsp. Vanilla
1/4 tsp. Ground nutmeg
2 Tbs. Raspberry jam
In a 9″ square baking dish, combine milk, rice, sugar, vanilla and nutmeg. Cover and bake in 300 degree oven until thick and light golden in color (about 3 hours).
Serve pudding warm and garnish each serving with 1 tsp. raspberry jam.
