3/4 lb. extra-lean ground beef
1/2 cup chopped onion
1 (1 1/4-oz) pkg. taco seasoninng mix
1 1/2 cups water
1 1/2 cups thinly sliced zucchini
1 cup frozen whole kernel corn
1 (14.5 oz.) can stewed tomatoes
1 1/2 cups uncooked instant rice
4 oz. (1 cup) shredded reduced-fat Cheddar cheese
In large skillet, brown ground beef and onion; drain. Stir in remaining ingredients except rice and cheese; bring to a boil. Stir in rice.
Reduce heat to low; cover and simmer 8 to 10 minutes or until liquid is absorbed, stirring occasionally.
Remove from heat. Fluff mixture with fork; sprinkle with cheese. Cover; let stand 3 minutes or until cheese is melted.
