Vegie Chili

INGREDIENTS
3 cloves Garlic
1 Med. Onion, chopped
2-3 Stalks Celery, chopped
1/2 lb. Mushrooms, sliced
1 Green pepper, chopped
1 Tbs. Vegetable oil
1 Tbs. Water
16 oz. Canned unsalted tomatoes, crushed
16 oz. Canned “less salt” kidney beans, drained
3 Tbs. Chili powder OR to taste
INSTRUCTIONS
Lightly saute fresh vegetables in oil and water until onions are tender. Add tomatoes, beans and chili powder. Cook over low heat 1 hour or longer.
