Roast Potatoes  

Servings: 6

1 Tbs. Olive oil
1 clove Garlic, crushed
1/4 tsp. Salt

1/4 tsp. Freshly ground pepper
1 1/2 lbs. Small new red potatoes, scrubbed and quartered
1 Tbs. Fresh parsley, chopped

Preheat oven to 425 deg. F. Mix oil, garlic, salt and pepper in 0=inch square baking dish. Add potatoes and turn to coat with oil. Bake until tender and browned, 30-35 minutes. Sprinkle with parsley.
