Peanut Butter-Oatmeal Cookies
INGREDIENTS
1 cup all-purpose flour
1/2 tsp. baking soda
1/2 cup margarine
1/2 cup peanut butter
1/3 cup sugar
1/2 cup packed brown sugar
2 egg whites
1/2 tsp. vanilla
1 cup rolled oats
INSTRUCTIONS
In a bowl stir together flour and baking soda. Set flour mixture aside. In a large mixing bowl beat margarine with electric mixer on medium to ohigh speed about 30 seconds or until softened.
Add peanut butter, sugar, and brown sugar to margarine. Beat until thoroughly combined, scraping sides of bowl. Add egg whites and vanilla. Combine. Add flour mixture, then beat on low speed until combined. Stir in oats.
Drop dough from a rounded teaspoon 2 inches aprt on an ungreased cookie sheet. Bake at 375 degrees for 8 to 10 minutes or until edges are golden. Remove cookies from sheet and cool on wire rack.
