Italian Salsa and Chips

1 package (10 oz.) pitas (6″ diameter)
1/4 cup (1 oz.) grated Parmesan cheese
1 1/2 tsp. Italian seasoning
5 plum tomatoes, chopped
1 small onion, chopped
3/4 cup chopped fresh basil
3 Tbs. balsamic or wine vinegar
2 Tbs. chopped olives
1 Tbs. olive oil
2 cloves garlic, chopped
1/4 tsp. salt
1/4 tsp. ground black pepper

Preheat oven to 375F. Cover a baking sheet with foil.
Cut the pitas into quarters. Separate each wedge into 2 pieces. Place on the baking sheet. Lightly coat the pitas with nonstick spray.
In a small bowl, combine the Parmesan and Italian seasoning. Sprinkle over the pitas. Bake for 8 to 10 minutes, or until golden and crisp. Transfer to a platter or serving basket.
In a medium bowl, combine the tomatoes, onion, basil, vinegar, olives, oil, garlic, salt and pepper. Serve with the chips.
