Ingredients
- 8 oz (2 cups dry) elbow macaroni of choice
- 1 cup tofu cottage cheese (see below)
- 3/4 cup sunflower sour cream
- 1 medium onion, diced and sauteed
- 1 cup Best Pimento cheese sauce
Tofu Cottage Cheese
- 1/2 lb firm water-pak tofu
- 3/4 teaspoon salt
- 1 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/3 cup Veganaise or homemade mayo
- 1 teaspoon chopped chives, fry or fresh
- 1 teaspoon chopped parsley, dry or fresh

Instructions
- Combine all ingredients. Bake in 350 degree oven for 30-45 minutes. (Don't let it get too dry.)
Tofu Cottage Cheese
- Mash tofu in bowl, add rest of ingredients and mix well.
