Non-Dairy Vanilla Pudding

2 1/2 + 1/8
Blend all ingredients until creamy.
Pour into sauce pan and bring to a boil stirring constantly until mixture thickens.
Cool. When cooling, place plastic wrap on top to avoid the “scum” formation.
To make chocolate pudding, omit the vanilla and use chocolate soymilk + 1-2 Tablespoons cocoa powder.
