Ingredients
- 1/4 cup raw cashews
- 1/3 cup cane juice crystals
- 1/4 teaspoon salt
- 4 Tablespoons cornstarch
- 1 teaspoon vanilla
- 2 1/2 + 1/8 cup soymilk

Instructions
- Blend all ingredients until creamy.
- Pour into sauce pan and bring to a boil stirring constantly until mixture thickens.
- Cool. When cooling, place plastic wrap on top to avoid the "scum" formation.
- To make chocolate pudding, omit the vanilla and use chocolate soymilk + 1-2 Tablespoons cocoa powder.
