Ingredients
- 2 cups dry lentils
- 5 cups water
- 2 Tablespoons McKay’s Chicken Seasoning
- 1/2 cup onion, chopped
- 1 1/2 teaspoons salt
- 2 cloves minced garlic
- 1 teaspoon sweet basil
- 1-2 bay leaves
- 2 teaspoons oregano
- 2 teaspoons sage
- 2 teaspoons onion powder
- 1 15-oz can Tomato Sauce (recipe below)

Instructions
- Look over the lentils for any debris and wash them.
- Put lentils, water, onion and seasonings in a pot on the stove and cook until lentils are soft ,approximately 45 minutes.
- When lentils are the consistency you want, add the tomato sauce and salt to taste.
- Place the toast on your plate and top with cooked lentils. Then add the chopped leaf lettuce, tomatoes, onions, and avocado. Top with your favorite topping.
Recipe Notes
I like to serve the lentils on Brown rice that has been seasoned with some Vegetarian Express Saucy Ranch dry seasoning mix instead of the toast. Then I top it with Chunky Sunrise Salsa.
