Eastern Vegetable Curry

INGREDIENTS
1/2 Med. Onion, chopped
1 clove Garlic
12 oz. Tofu, cubed
1 Med. Apple cubed
3 Cloves
1/2 Stick Cinnamon (optional)
1/2 tsp. Curry powder
1/2 Cup Green pepper strips
1/2 Cup Mushrooms
1/2 Cup Chicken stock or water
2 Tbs. Raisins
1/2 Tbs. Cornstarch
INSTRUCTIONS
Saute first 6 ingredients until onion and tofu start to brown. Add remaining ingredients (except cornstarch) and simmer 10 minutes. Dissolve cornstarch in 2 Tbs. water. Add to mixture. Cook until thickened.
