Chunky Sunrise Salsa

Servings: 4

2 Tablespoon lime juice
1 Tablespoon olive oil
1 or 2 cloves garlic, pressed or finely minced
¼ teaspoon salt
½ pint grape or cherry tomatoes cut in halves or quartered
¼ cup sliced black or ripe green olives
1 large avocado, chopped
½ bunch green onions, thinly sliced
½ cucumber, chopped

1. Stir together lime juice, olive oil garlic, and salt. Set aside.
2. Chop all veggies into a bowl, as directed.
3. Sprinkle on the lime juice dressing and stir gently until all is evenly mixed.
4. Taste and add seasoning, if needed.
5. Serve.
