Alfredo Pesto Sauce

1 cup fresh spinach, chopped
1 cup fresh parsley or fresh basil or a combination of both
2/3 cup green onions, roughly chopped
2-3 cloves garlic
1 package Mori-Nu tofu, firm or soft
3 Tablespoons McKay’s Chicken Seasoning
1/4 cup water
1/3 cup extra virgin olive oil
1/4 teaspoon salt

1. Place all ingredients in blender or food processor and blend until smooth and immediately serve over 1 lb. of hot whole-grain pasta.
