Ingredients
- 1 1/2 cups quinoa
- 2 1/2 cups water
- 1/2 cup green onions
- 2 oz sliced black olives
- 1 1/2 cups tomato, diced small
- 1 1/2 cups English cucumber, diced small
- 1 1/2 cups bell peppers, green, yellow, orange; diced small
Dressing
- 3 Tablespoons oil
- 2 Tablespoons lemon juice
- 1/2 teaspoon garlic powder
- 1 - 1 1/2 teaspoons sea salt, optional

Instructions
- Rinse quinoa in a fine mesh colander.
- In a medium sized pot, bring water to a boil. Add quinoa.
- Cover and simmer approximately 15 minutes until water is absorbed.
- Remove from heat and cool.
- Add vegetable ingredients to cooled quinoa. Chill.
- Mix together dressing ingredients thoroughly. Add to salad and toss.
- Allow to marinate 30 minutes in refrigerator before serving.
- Good in a whole-grain pita pocket with hummus.
