Peanut Gravy
Author: Adapted from Vicki Griffin’s THE GUILT-FREE GOURMET ~ This gravy is perfect over potatoes, rice or toast. It’s wonderful as a gravy for pot pie filing, too. Mix it with green peas and chick peas and serve it over rice for “Chick-pea Ala King.”

  1. Blend all ingredients and pour into a saucepan and thicken over medium heat, stirring constantly with a whisk.
  2. Serve.
