Ingredients
- Mashed potatoes
- 5 cups potatoes, cubed
- 1/2 cup plain soy milk, adding more, a tablespoonful at a time, if necessary
- 1 1/2 teaspoons onion powder
- 2 Tablespoons lecithin granules
- 1/4 teaspoon garlic powder
- 1 to 1 1/2 teaspoons salt
- 2 Tablespoons nutritional yeast flakes

Instructions
- Place cubed potatoes in large kettle with water and bring to a boil.
- Reduce heat and simmer until potatoes are soft.
- Remove from heat and drain.
- Add remaining ingredients and mash with a potato masher or whip with an electric mixer.
