Ingredients
- 2 Tablespoon lime juice
- 1 Tablespoon olive oil
- 1 or 2 cloves garlic, pressed or finely minced
- ¼ teaspoon salt
- ½ pint grape or cherry tomatoes cut in halves or quartered
- ¼ cup sliced black or ripe green olives
- 1 large avocado, chopped
- ½ bunch green onions, thinly sliced
- ½ cucumber, chopped

Instructions
- Stir together lime juice, olive oil garlic, and salt. Set aside.
- Chop all veggies into a bowl, as directed.
- Sprinkle on the lime juice dressing and stir gently until all is evenly mixed.
- Taste and add seasoning, if needed.
- Serve.
