Ingredients
- 1/4 cup hot water
- 1 Tablespoon grand flax or chia seeds
- 1 cup white whole wheat flour
- 1/2 cup oat flour
- 1/2 cup cane juice crystals
- 1/2 teaspoon salt
- 2 teaspoons aluminum free baking powder
- 1/3 cup canola
- 1/2 cup non-dairy milk
- 1 cup fresh or frozen blueberries

- 1/2 cup oat flour
- 1/4 cup coconut oil

Instructions
- Preheat over to 400 degrees. Line muffin tin with liners.
- Combine hot water with ground flax or chia seeds in a small bowl.
- Combine topping ingredients and set aside.
- Combine flour, sugar, salt and baking powder in a large bowl.
- Mix together oil, milk and flax mixture in a small bowl.
- Add oil mixture to flour mixture and stir, being careful not to over mix.
- Fill muffin cups about 3/4 full and sprinkle with crumb topping mixture.
- Bake 20-25 minutes in the preheated over or until done.
